Edging the garden has several advantages First it will create a pleasing look by giving the line between the garden and lawn, or the garden and walk. But beyond that, it stops the plants from sending roots into your lawn, and stops the grass from invading your garden. Lastly it helps the mulch to stay in place and not migrate into your lawn. In my opinion the best time to edge and mulch in garden beds is in late March through early May however it can be done most any time.
